Recipe Review: Cheesy veggie soup.... mmmmmm!

Oh how I love to have soup for dinner in the fall/winter. To me, there is nothing like a good bowl of soup and a nice piece of crusty bread- some days I long for a bread maker...
   I've been making this recipe for years. Actually, I think I've been eating it for about 20 and making it for about 10. Maybe that explains the extra cushion on my thighs.... hmm...



  This soup is based on ingredients you are sure to have in your home: carrots, onion, potatoes, celery are the veggies. The base of the soup is water and chicken stock (add in milk and cheese for the yummy goooey goodness). It's so simple yet delicious.

Recipe:
3 c. chopped potatoes
1/2 c. celery slices
1/2 c. carrot slices or diced.
1/4 c. onion chopped.
1 tsp. parsley (fresh or dried)
1/2 tsp salt
dash pepper
1 can chicken broth
1 1/2 c milk
2 Tbsp flour
1/2 lb velveeta, cubed

Combine all veggies, seasonings and broth. Cover and simmer 15-20 minutes or until veggies are tender. In a small bowl, gradually add milk to flour, stirring well until blended.  Add milk mixture to veggies and cook until thick. Add cubed cheese, stir until melted.

Add ins: chopped green onion, chopped bacon, ham or chicken.
