I realized that I had some pics of different recipes in the camera which then made me realize that I haven't done a review in a while.... Here you go!
I found this minestrone recipe from the John's Journal blog I check a couple days a week. Cute, short but precise writing with GREAT photography. Anyway, she posted this recipe for minestrone that looked amazing- much better than the recipe I had.
Confession: I was afraid of kale. I had never tried it. It was thicker and firmer than any other green leafy thing I've ever eaten.
Confession: this wasn't from a restaurant, so I was nervous as to if it would be good.
Making it: Not terribly hard. Didn't take a long time either. The recipe was simple to follow despite the many many ingredients listed.
Ingredients: yes, there are a lot, but the majority you already have in your pantry or fridge... okay, maybe not kale, but you get what I mean.
My thoughts: Easy to make, simple, different from the norm so it's a nice change up. The flavor: AMAZING!!!!! By far the best minestrone I've ever had. AMAZING! AMAZING! Did I mention that it was pretty amazing?
Hubby's thoughts: Good flavor, he enjoyed it too.
Note: Kale has a bite to it that makes it a little spicy. This recipe has a slight spice to it.
Last thoughts: When storing it for the next day, we had an issue where all the broth was absorbed by the noodles. It was still good, but more a casserole than soup. :(
Delicious, easy, fairly cheap makes this a winner!
